Vinegared Ginger Slices

  1. Peel and slice ginger as thin as possible
  2. Combine the vinegar, sugar and salt to taste
  3. Heat the liquid mixture to a boil, stirring for 1 minute, to make sure the sugar has dissolved
  4. Place ginger in a bowl and pour hot vinegar on top
  5. Cover and allow to cool
  6. Chill before serving
  7. Tjis recipe will keep refrigerated for several weeks
  8. If you want a deeper pink, add food coloring
