Bereiding

  1. Broil eggplant on all sides until well cooked
  2. Scrape off skin and mash well with a wooden spoon
  3. Add salt to taste
  4. Mix grated onion with 1 teaspoon of the oil and add to eggplant
  5. Add remaining oil to eggplant slowly, stirring constantly
  6. Add lemon juice and serve as an appetizer on crackers or bread
