Lebanese Lepina plat brood met ui en sesamzaad

  1. This bread can be in the oven in around 40 minutes from weighing out the ingredients
  2. Place the flour, sugar and salt onto a clean surface
  3. Mix together the water, milk and yeast and allow to sit for 10 minutes in a warm place until frothy
  4. Make a well in the centre of the flour and pour in the liquid, work into a dough and kneed for 5 minutes until smooth
  5. Allow it to sit for 5 minutes, then divide into 4 even pieces and roll into balls
  6. Take each ball and flatten out into a long shape, place onto a baking tray dusted with semolina or polenta
  7. They should look rough
  8. Cover with plastic wrap and prove for 40 minutes - they will be fluffy and soft - brush with milk and sprinkle with onion and sesame seeds
  9. Make a few indentations with the tips of your fingers then bake in the oven at 230°C for 20 minutes until crisp and golden
