  1. ~Beverly has known the Cuccia's for years
  2. Vicki graciously gave her the recipe
  3. It's an all day soup, slow simmer, it needs skimming
  4. You could substitute meaty bones
  5. Beef base is sold retail at quantity grocers and membership stores
  6. This recipe does not use instant barley
  7. ~ Put bones in soup kettle and cover with water
  8. Bring to boil, cover and reduce heat to simmer for 4 hours
  9. Skim foam as it appears
  10. Add tabasco, beef base, salt and pepper
  11. Simmer for 30 minutes, stirring occasionally
  12. ~ Strain broth and scrape any meat from bones
  13. Put strained broth and bits of meat into pot
  14. Add onions, carrots, celery, potatoes and barley
  15. Bring to a boil, reduce heat and simmer about 1 hour or until barley is cooked
  16. Add tomato paste and simmer another 15 minutes
