  2. Toss the chicken pieces in the paprika, chilli powder, cumin and oregano

  4. Heat 5ml/1tsp of the oil in a pan and saut? the chicken, stirring occasionally for 3-4 minutes
  5. Remove the chicken with a slotted spoon

  7. Add the remaining 15ml/1tbsp of oil and saut? the garlic, onion and red pepper for 5 minutes

  9. Return the chicken to the pan, season to taste and heat through

  11. To make the tomato salsa, heat the oil and fry the chilli, onion, pepper and garlic for about 5 minutes
  12. Add the vinegar and cook for about 20 seconds
  13. Add the chopped tomatoes, salt and pepper and parsley and simmer, uncovered, for about 15 minutes

  15. To assemble, heat the tortillas in the microwave according to the packet instructions
  16. Then place some of the chicken mixture along the centre of each tortilla, top with some tomato salsa, shredded lettuce, grated cheese and a little sour cream and roll up
  17. Note: Chicken is a good source of lean protein and has the advantage of being very versatile and quick to cook
  18. The darker the meat of the chicken, the more fat it contains, and the skin is very high in fat too
