Virginia Fried Chicken with Cream Gravy

Bereiding

  1. Remove skin from chicken
  2. Combine 1/2 cup flour, 1/2 tsp
  3. salt, pepper, allspice & nutmeg in large paper bag
  4. Place chicken a few pieces as a time in bag & shake to coat evenly
  5. Heat oven to 275
  6. Melt 1/2 cup butter with 1 Tbls
  7. oil in large, heavy skillet over med low heat
  8. (Do not let butter burn
  9. ) Gently place chicken in skillet
  10. Do not crowd pieces; use 2 skillets if necessary
  11. Saute over med low until golden, 12 minutes on each side
  12. Add more oil & butter as needed
  13. Remove chicken; drain on paper towels
  14. Place chicken in shallow baking pan; transfer to oven
  15. Bake chicken uncovered 30 minutes to 1 hour
  16. Meanwhile, drain all but 2 Tbls
  17. fat from skillet
  18. Stir in 2 Tbls
  19. flour over low heat; cook, stirring constantly, 2 minutes
  20. Whisk in stock, scraping bottom & sides of pan
  21. Stir in cream; cook over low heat for 20 minutes
  22. Season with salt & pepper
  23. Just before serving, add bourbon
  24. Spoon some of the sauce over chicken; pass remaining sauce
