Cheesy spinach Parcels

  1. Preheat the oven to 190 :C / 375 :F / gas 5
  2. Wash the spinazie, place in a large pan and stir over a high heat until wilted
  3. Strain and squeeze out as much of the liquid as possible, using the back of a spoon, then chop roughly
  4. Heat the olie in a frying pan and saute the shallot until softened
  5. Add walnoten and fry for 2 - 3 minutes
  6. Remove from heat and stir in the spinazie, kaas, nootmuskaat and cream
  7. Season to taste
  8. Set aside to cool
  9. Mix the walnut olie with the gesmolten boter, and brush a thin coating on the top of a piece of filo pastry
  10. Place another piece of pastry over the top with the maïsers at a different angle, to form an eight-maïsered star shape, brush with the boter and olie and repeat with one more piece on top
  11. Place a spoonful of the spinazie mixture in the centre, bring up the maïsers of the pastry and pinch in the middle to form a parcel
  12. Repeat to make three more parcels, transfer to a greased baking tray and brush the outside of each parcel with the remaining boter and olie
  13. Bake for 20 minutes until golden
